At Poverty Bay Coffee Company we believe that when you are roasting the best coffee in the world you have an obligation to use the best roasting process in the world. That is why we use the Sivetz Air Roasting System. Without a doubt air roasting gives you the best and most consistent roast possible.
The art of roasting is choosing the right ingredients, coming up with the best possible blend of those ingredients and determining what temperature best serves both. The science of roasting is making sure that the roasting process is consistent day after day, batch after batch. We feel that maintaining both elements (art & science) of coffee roasting, we can ensure that every bean delivered is of the highest quality.
For us we have achieved the art of roasting by developing a long term purchasing arrangement with the farmers of the Malinal Estate and the farmers of Café Selvanica.
We pay these farmers a price that exceeds fair trade certification standards and they grow their wonderful coffee in a way that exceeds organic certification standards. In addition, our friends at San Cristobal and Jungle Tech work directly with the farmers to help them process their outstanding coffees in a way that minimizes local pollution and assures that each bean is at it’s absolute peak quality.
We believe in the quality achieved through small batch roasting. Each roast is 38 lbs in and 31 lbs out and takes around 12 minutes. This allows us to roast 150 lbs per hour and 1200 lbs in an 8 hour work day. One thing you can be sure of when you purchase Poverty Bay Coffee is that it is freshly roasted through a well-developed process by an experienced Roast Master.
